日式廚師發板 (主廚/副主廚/大工/中工/學徒) / Japanese Omakase Chef
職責 (Responsibilities) :
- 對食材有基本認識,準備及處理食材,菜色擺盤,招待食客
- 保持出品質素
- 清潔廚房及櫃檯, 確保衛生情況符合標準
- 廚房一般雜務
* 學徒會跟日本師傅學習
主廚/ 副主廚等職位:
- 帶領團隊準備及製作食物
- 確保所有廚房設備按照指示正確運作
- 定期檢查存貨,採購食材並控制成本
- 監督所有食品製作和儲存的衛生和清潔標準
- 確保所有食品的風味、呈現、分配、調味的一致性
- 依照管理層的指示和同意開發新菜餚和菜單,遵循公司在開發新菜單、食品品嚐和菜餚成本計算方面的所有程序
- 協調所有廚房員工的工作流程
Japanese Omakase Chef:
Directly responsible for all kitchen functions, including food purchasing, preparation and maintenance of quality standards; sanitation and cleanliness; training of employees in cooking, preparation, plate presentation, portion and cost control.
要求 (Requirements):
- 對餐飲服務和日本菜有熱誠
- 有日式廚師發板經驗優先,根據工作經驗提供職位
- 需具備食品安全、環境衛生與個人衛生知識
- 持有衛生經理證書優先
- 基本的電腦和書面溝通技能
- 良好粵語, 英語及日語會話 (需能夠與日本師傅溝通)
主廚/ 副主廚等職位:
- 強大的領導能力、解決問題的能力、溝通和人際交往能力
- 組織能力強,具備較強的多工處理能力並能夠注重細節
- 能夠組建並領導強大的廚房團隊
Japanese Omakase Chef:
- Japan local Omakase restaurant experience is required, in which supervisory experiences for a higher level position
- Knowledge of food safety, sanitation and hygiene
- Have a passion in Japanese cuisine
- Certified in Hygiene manager preferred
- Strong leadership, problem-solving, communication and interpersonal skills
- Highly organized with strong multi-tasking skills and attention to detail
- Basic computer and written communication skills
- Ability to form and lead a strong Kitchen team
- Ability to organize, prioritise and anticipate
- Effective communication skills
- Language skills, such as English and Japanese, are required
